Description & Process

The Granmugello is a high-quality cheese produced by Il Palagiaccio, a Tuscan farm with deep medieval roots. Made from a summer cow’s milk cheese, matured for one year in caves, and massaged weekly with olive oil, the Granmugello undergoes a special process in its making, which gives it its unique and intense flavor. 

Milk pasteurization and cooling up to 35° C/ 40° C; Milk Enzymes and Rennet addition; Curding; Manual breaking of the curding; Manual discharge of the cheese into molds; Dry Manual Salting; Drying; Maturing.

The Granmugello is a prime example of the art of Tuscan cheese making and are products of not only the region but also of artisanal process and tradition. It is characterized by its ivory color, compact, texture and explosive flavor, which combines the delicate sweetness of the milk and the fragrant aroma of olive oil. 

Why we chose this product

We visited the Palagiaccio Farm in late September when the Granmugello reaches its maturation. As we entered the dark caves in which the cheese is stored with only the light of torches, we realized the uniqueness and beauty of this product, which exemplifies the culinary tradition of the Tuscan region and also captivates the senses; taste, smell, touch, and sight. 





Why we choose it

We visited the farm late September when the Granmugello reached maturation ideal for consumption. Enter the cave with only the light of the torches was a great experience.

The intense aroma of milk and olive oil has accompanied the annual event of the first cut of Granmugello with the whole family: Luigi and Antonella with their twin sons Carlo and Francesco. Taste and tasting this cheese has captured three senses: flavor, smell and look.
