Description

 The Grantartufo cheese is a prime example of the art that goes into Tuscan cheese making, especially at the Palagiaccio dairy, which has a history over 800 years. Its flavor is emboldened with pieces of black and white truffles, both staples of fine Tuscan cuisine. 

Process

Each wheel weighs between twelve and sixteen pounds and is aged between twelve and fifteen months.

Why we choose it

We visited the farm late September when the Granmugello reached maturation ideal for consumption. Enter the cave with only the light of the torches was a great experience.

The intense aroma of milk and olive oil has accompanied the annual event of the first cut of Granmugello with the whole family: Luigi and Antonella with their twin sons Carlo and Francesco. Taste and tasting this cheese has captured three senses: flavor, smell and look.
