Egg Tagliatelle is a pasta product typical of Italy and has a proud tradition. La Fraiola is a pasta maker in a small town in the region of Abruzzo and uses a traditional, mono-processing techniques. This process gives the pasta a distinct consistency and robustness and keeps it from becoming sticky. It has a soft and extremely resistant texture. 


Durum wheat, Semolina, Pasteurized whole hen eggs, Saffron Vallelonga, Water 


La Fraiola Egg Tagliatelle is served best accompanied with vegetable or meat sauces. But for the best taste of the pasta, it is best served with extra virgin olive oil, butter and sage, or with a sprinkling of seasoned cheese. 


Why we choose it

Our trip around Italy searching for excellent products has allowed us to meet several high quality artisanal pasta makers. Here in Abruzzo we met Mario Cimaroli, so passionate about his work and with a great desire to present his pasta to food lovers. He describes all the steps of the process and all the care that people who work with him take to get the best.

Mario devotes a lot of time to make known his work outside of Italy. He told us of many travels in Europe, in London, Paris and Berlin but also in the United States in New York to taste his pasta. The evening spent at La Fraiola with him was great, the people who work with him are the whole family, each one so passionate. In the kitchen of their workshop we tasted tagliatelle with two condiments: with extravirgin olive oil and cheese to appreciate the texture and the flavor, and then with his friend Gianni Orlandi who brought fresh truffles ... they won us over our senses.
